Salmon burgers with avocado slaw

 

Salmon Burgers

1 lb salmon fillet (skin removed)

1 c plain breadcrumbs

1/4 c chopped cilantro 

2 eggs

1/4 c mayo

1 tbsp lemon juice

1 tsp mustard

1/2 tsp salt

1/2 tsp pepper

olive oil for greasing the pan

 

Avocado Slaw

1 large avocado chopped

1/3 c chopped red onion

1/4 c chopped fresh cilantro

1 lime, juiced

1 tbs olive oil

salt and pepper

 

Chop the salmon filet into small pieces and transfer to a medium mixing bowl

Stir in the rest of the ingredients gently and let rest 5-10 minutes. Heat a little oil on large grill pan over medium. Divide the mixture into 6 and form neat patties (about 1/2 cup each) Fry/grill the patties about 4 minutes on each side. 

Combine slaw ingredients and mix well. Top burgers with slaw or serve on the side.
